Meatballs with Kale, Roasted Potatoes, and Herbs







Ingredients for meatballs

  • 1 lb ground beef

  • 1/4 cup parmesan cheese

  • 1 egg

  • 1 tsp. salt

Ingredients for potatoes and kale

  • 1 1/2 lbs small red potatoes, cut into 1/2-inch pieces

  • 3 Tbsp butter, melted and divided

  • 8 ounces kale (about 1 small bunch), rinsed, stems and tough ribs removed, then roughly chopped


Directions for meatballs

  1. Add all the meatball ingredients to a large bowl and mix well, using your hands or a fork. Shape into 1 inch meatballs.

  2. To bake meatballs, coat a baking sheet with cooking spray, place meatballs on baking sheet.

  3. Heat oven to 400º F for 15-20 minutes until bolden brown.


Directions for potatoes and kale

  1. Increase the oven temperature to 425º F. Arrange potatoes on a baking sheet and drizzle with half of the melted butter, stir to coat.

  2. Roast until potatoes are beginning to brow, about 15 minutes. Remove from oven, stir potatoes.

  3. Toss kale with remaining butter until evenly coated. Arrange kale on top of potatoes.

  4. Return to the oven and roast until kale is crisp and beginning to brown, about 10 minutes.
