Methods to make as much as you’d like

Simple Oven Roasted Potatoes


  • Potatoes, washed and cut into 1 inch cubes

  • Heart healthy oil

  • Salt and pepper to taste


  1. Preheat oven to 425°F. Arrange potatoes on a baking sheet and drizzle with a small amount of oil. Sprinkle with salt and pepper.

  2. Roast in oven until potatoes are beginning to brown, about 10-15 minutes. Remove from oven, stir or turn potatoes.

  3. Return to the oven and roast until potatoes are soft in the center, approximately an additional 5 minutes.

Quick and Easy Steamed Potatoes


  • 1 medium potato, washed

For topping, optional

Fresh herbs, chopped salt, pepper, butter or sour cream


  1. Carefully pierce potato 3-4 times with a fork.

  2. Place potato on a microwave-safe plate and microwave 4 to 5 minutes, turning halfway through.

  3. If your potato is cooked, it will be fork tender. If it is still hard in the center, continue microwaving in 30 second increments. Split potato down the middle, being careful of any steam that may escape. Season as desired and enjoy!
