Roasted Sweet Potatoes

Makes about 6 servings


  • 3 medium sized sweet potatoes

  • Olive oil, as needed

  • Salt to taste

  • Crushed pepper to taste


  1. Preheat oven to 375°F.

  2. Line a sheet pan with parchment paper.

  3. Cut sweet potatoes into cubes of uniform size, approximately 1 inch.

  4. To a sheet pan, add olive oil and sprinkle salt and pepper on top of the sweet potatoes. Toss to coat.

  5. Roast for 20-25 minutes or sweet potatoes are soft and desired browning is achieved.

Try them with:

  • Pecans and bacon

  • Picadillo

  • Chopped herbs and dried cranberries
