Spinach Frittata

Makes 4-6 servings






Ingredients

  • 10 large eggs

  • 1/4 cup grated Parmesan or cheddar cheese

  • 1 tsp. granulated garlic

  • 1 tsp. granulated onion

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 2 Tbsp. milk, Greek yogurt, or sour cream

  • 8 oz. (by weight) baby spinach (washed, dried, and torn into pieces)


Directions

  1. Heat oven to 400º F.

  2. In a large bowl, whisk together eggs, cheese, garlic, onion, salt, pepper, and sour cream. Set aside.

  3. Place baby spinach in the bottom of a 9-inch oven proof skillet or deep dish glass pie pan. Pour egg mixture on top.

  4. Bake for 25 minutes or until center feels firm and springy.


Variations

  • Add chopped fresh herbs (during cooking with egg mixture or to top after frittata is baked)

  • Add crumbled bacon or sausage

  • Change up the cheese – try gouda, Swiss, pepper-jack or your family’s favorite variety
